Our Tap Room is open from 12-7 on Thursdays, Fridays, Saturdays and Sundays for pints and beer to go. We do free tours on Saturdays. We have beer to sell by the six pack & four pack or we can fill your growlers. In 2005, Falcon Music & Art Productions, Inc. purchased a 19th century button factory in the center of the hamlet of Marlboro. 1348 Route 9W, Marlboro, New York, is perched over the Marlboro Falls, once used to power the factory. Through the years, the main floor of the building had been a roller-skating rink, community center and a cabinet factory. It has become the “Village Vanguard of the Hudson Valley” and on a regular rotation with New York City's most respected venues; a rural Mecca for the finest in multiple genres; to include jazz, blues, rock, world music and contemporary chamber music. The 3,500 square foot main floor provides the acoustically correct, live performance venue with a 24’ X 16’ stage. Gallery space on the main floor presents & promotes the work of visual artists and photographers from the Hudson Valley to New York City. Exhibitions feature a different artist every two months. The Falcon takes no fee from art sales, but encourages visitors to buy original pieces from the artists. The barroom was created entirely with recycled materials. The Restaurant at Helsinki Hudson carries on a 15-year tradition started at the wildly popular former location in Massachusetts - that is of creating a menu of creative homespun seasonally selected food in a welcoming and beautiful atmosphere.
Executive Chef Hugh Horner melds his deep Texas and Louisiana roots with his involvement in the farming culture of the Hudson Valley to create a southern scratch soul kitchen like nothing else around. His menus reflect food from his youth - tastes learned cleaning crawdad's along side his grandmother, where outdoor cooking, Pig Pickings, Shrimp Boils and Oyster Roasts were the norms of the day.
At Helsinki, he combines old and traditional southern recipes with elevated ingredients and technique using Hudson Valley produce, local meats and sustainable East Coast Seafood.
As the season allows, dawn finds Chef making stops at his favorite area farms to source out the bounty he needs for the week ahead. He arrives at his Helsinki kitchens to tend to his courtyard smokers as Hudson is slowly waking up.
Hudson is a late night town and although his days begin early, he catches parts of nearly every show, greeting artists he has come to love with his special brand of pre-show dinner fortification.
Like most chefs, Hugh burns his candle at both ends, but the illumination pays off. Musicians like Chuck Prophet and Taj Mahal sing praises to him from the stage thanking him for his lavish spreads. Some of his favorite artists, like Glen David Andrews and the late great Sharon Jones come directly into his kitchens to sample his offerings talk recipes and visit with the rest of his crew on the line.

The Falcon's long-awaited "pub-beneath-the-club" - The Falcon Underground - introduces its New York Taproom + Beer Garden, over the magnificent Marlboro Falls! The scene includes live music, gorgeous outdoor spaces and proudly serving New York-sourced food and libations. Chef James Cundiff has created a fine gastro-pub menu. Order at his self-service window and grab a beeper to let you know when it’s ready to pick up!
