The Restaurant at Helsinki Hudson carries on a 15-year tradition started at the wildly popular former location in Massachusetts - that is of creating a menu of creative homespun seasonally selected food in a welcoming and beautiful atmosphere.
Executive Chef Hugh Horner melds his deep Texas and Louisiana roots with his involvement in the farming culture of the Hudson Valley to create a southern scratch soul kitchen like nothing else around. His menus reflect food from his youth - tastes learned cleaning crawdad's along side his grandmother, where outdoor cooking, Pig Pickings, Shrimp Boils and Oyster Roasts were the norms of the day.
At Helsinki, he combines old and traditional southern recipes with elevated ingredients and technique using Hudson Valley produce, local meats and sustainable East Coast Seafood.
As the season allows, dawn finds Chef making stops at his favorite area farms to source out the bounty he needs for the week ahead. He arrives at his Helsinki kitchens to tend to his courtyard smokers as Hudson is slowly waking up.
Hudson is a late night town and although his days begin early, he catches parts of nearly every show, greeting artists he has come to love with his special brand of pre-show dinner fortification.
Like most chefs, Hugh burns his candle at both ends, but the illumination pays off. Musicians like Chuck Prophet and Taj Mahal sing praises to him from the stage thanking him for his lavish spreads. Some of his favorite artists, like Glen David Andrews and the late great Sharon Jones come directly into his kitchens to sample his offerings talk recipes and visit with the rest of his crew on the line.
